Lentils and Chard

Makes 4 servings

1 tbsp olive oil
1 medium onion, peeled
3 cloves of garlic, chopped
1 cup yellow lentils
1 tbsp chopped gingerroot
1 tsp curry powder
1/2 tsp salt
1 lb red Swiss chard, cut into 1-inch slices, tough stems removed

1.  In a large pot, heat oil over medium-high heat.  Add onion and garlic and cook 5 minutes, stirring occasionally.

2.  Stir in 2 cups water, lentils, ginger, curry and salt.  Simmer, covered, over medium heat 10 minutes, stirring occasionally.

3.  Stir in chard and simmer 5 minutes.
