Shepherds Pie

Makes 2 Casseroles (about 8 servings each)

3 pounds ground beef
1 onion, chopped
1 bag (16 oz) frozen mixed vegetables (or 2-3 cans of your favorite)
1 bottle (regular size, or to taste) barbecue sauce
3 pounds potatoes
1/2 cup butter
2 cups milk
3 cups shredded cheddar cheese, divided

1.  Peel and cut up potatoes and boil until soft.  Make mashed potatoes with the milk and butter (or however you normally make mashed potatoes).

2.  Brown the ground beef with the onion.  Drain fat.  Mix in barbecue sauce and vegetables.

3.  Divide ground beef mixture between two 9 x 13 casserole dishes.  Top each casserole with half the mashed potatoes.  Sprinkle half the cheddar cheese on each of the casseroles.

4.  Cover both with foil and bake one at 350°F for 15 minutes or until cheese is melted.  Label and freeze the other casserole for up to 3 months.

TO USE FROZEN CASSEROLE:  Defrost the casserole in the refrigerator overnight.  Bake, covered, at 350°F for about 45 minutes or until heated through and cheese is melted.
