So far everything that I have made out of this cookbook (Eat, Shrink & Be Merry! Great-Tasting Food That Won't Go from Your Lips to Your Hips!) has been absolutely delicious! And the best part is, they are all healthy, lower calorie meals! I LOVE it!
My husband really likes curry dishes, so this was a hit with him right away. I like them to an extent. I enjoy sweet curry dishes. This one was really good because it had coconut milk and apples in it.
It was easy to make with not too much prep. You do have to prep the chicken a bit and chop a few things, but other than that, it was pretty simple and quick. A great thing about this recipe is that it is a one-dish recipe. Not a ton of dishes to do later!
Cameron really liked this recipe. Connor, eh, he is Connor. It is pretty hard to please him. He did eat the apples and chicken, though, so that is a good thing! :)
It has been put on the list of "will make again" recipes! :)
